This is the first in a series of recipes we want to share from friends, from local eateries and from distant shores. Despite the diminutive physique of tiny JC, she consumes enough food for someone three times her size. She eats at least twice as much as curvy JC other. Seriously, we know good food.
Our hot friend Sally shared this salsa with us and we would be hard pressed to think of anything on which it does not taste good . . . tortilla chips, chicken, fish, eggs...
Sexy Sally's Summer Salsa
2 mangos - peeled, pit removed and chopped
2 cups fresh pineapple
8 ounces diced fire roasted tomatoes
1 small onion, chopped
2 jalapeno peppers, seeded and chopped (more for spicier palates)
2 tablespoons fresh cilantro
1 tablespoon apple cider vinegar
1 lime, juiced
salt & ground black pepper to taste
1. Combine all ingredients in food processor (or blender) until desired consistency
2. For best results, refrigerate for at least 3 hours
